- Salmon filets
- Olive oil
- Jalapeno (diced)
- Shallots (diced)
- Garlic
- Shrimp (cubed)
- Cajun seasoning
- Lump crab
- Worcestershire
- Lemon (juice & zest)
- Cilantro
- Mayo
Sauce
- Shrimp
- Butter
- Garlic
- Lemon zest
- Heavy cream
- Parmesan
- Cilantro
Equipment
- Two skillets (one oven-safe)
DIRECTIONS
- Preheat oven @ 450°
- In skillet, sauté the jalapeno, shallots, shrimp, Cajun seasoning and garlic.
- Remove and put into mixing bowl to cool.
- Add crab, Worcestershire, lemon juice & zest, cilantro, more Cajun seasoning, and mayo.
- Cut a deep slit down the middle of the salmon, stuff or cover.
- In a cast iron or oven-safe skillet, heat oil and place stuffed salmon in pan. Instantly transfer to oven.
- Bake for six(6) minutes.
Sauce
- Heat oil in skillet, add shrimp, butter, garlic, lemon zest.
- Finish with heavy cream and a dusting of parmesan and cilantro.
- Cover the salmon with the Sauce.
