- Timing considerations: The meatballs take 25 minutes to bake. Depending on the rice you make, arrange for it to finish about 5 minutes before serving.

- The portions below make about 3 bowls.
- Optional: Use zucchini noodles instead of rice.
Ingredients
- Ground Chicken (1 pound)
- Egg (1)
- Almond Flour (1/4 cup)
- Feta cheese (1/4 cup)
- Fresh Dill (chopped, 1 tablespoon)
- Fresh Parsley (chopped, 2 tablespoons)
- Garlic Powder (1 tablespoon)
- Oregano (1 tablespoon)
- Tzatziki Sauce (to taste)
- Hummus (to taste)
- Cherry Tomatoes (sliced, to taste)
- Cucumber (diced, to taste)
- Rice (cooked, I prefer Jasmine rice)
- Salt & Pepper
EQUIPMENT
- Mixing bowl
- Baking sheet
- Parchment paper
- Saucepan
DIRECTIONS
- Preheat your oven to 400°F.
- Line a baking sheet with parchment paper.
- In a mixing bowl, combine the chicken, egg, almond flour, feta, garlic powder, oregano, parsley, dill, salt, and pepper.
- Shape into meatballs and bake for 25 minutes.
- Cook the rice.
- Serve with the cherry tomatoes, cucumbers, feta, tzatziki, and hummus.
